The A2 beta-casein protein, which is naturally produced by cows and is thought to be easier to digest than the A1 beta-casein protein found in ordinary milk, is the source of A2 cow milk. Because it may help with digestion, it's becoming more and more popular, and it's frequently promoted as a healthier option.

Rich and creamy texture, increased fat content, and unique flavor compared to cow's milk make premium buffalo milk highly valued. It is prized for its nutritional profile as well because it has higher levels of vitamins, calcium, and protein. Owing to its special qualities, many people favour it for manufacturing dairy products like cheese and yoghurt.

Fresh paneer is a non-aged, cheese made by curdling milk with an acidic ingredient. Unlike other cheeses, it doesn't involve rennet or any fermentation process. Common acidifying agents used include lemon juice, vinegar, buttermilk, or yogurt.

Fresh paneer is a staple ingredient in Indian cuisine. It features in a wide variety of dishes, including curries like palak paneer (spinach and paneer curry), matar paneer (peas and paneer curry), and paneer butter masala. Paneer can be fried, grilled, scrambled, or even crumbled into salads. Its mild flavor and firm texture make it incredibly versatile.

Bilona Ghee, also referred to as desi ghee or clarified butter, is a traditional cooking fat originating from the Indian subcontinent. It holds a significant place in Indian cuisine, boosting rich flavor, cultural significance, and a meticulous preparation process.

Bilona Ghee plays a versatile role in Indian cuisine. Its high smoke point (the temperature at which the fat breaks down) makes it ideal for high-heat cooking like stir-frying, sauteing, and deep frying. It adds a rich, buttery flavor to curries, dals, rice dishes, and vegetables.

Bilona Ghee holds cultural significance in Ayurveda as well . In Ayurveda, it's considered a sattvic food, believed to promote balance and well-being. Ghee is often used in religious ceremonies and rituals. Due to its slow preparation and the use of traditional methods, Bilona Ghee is typically more expensive than commercially produced ghee. However, many consider the superior taste, health benefits, and cultural significance to be well worth the price.
